We’re Matt and Katie, the husband and wife team behind Roll & Rise Bagels. After two decades of conventional careers, we followed our passion in 2024 to bring you the best hand-rolled and boiled bagels in Arizona. Crafted with Katie’s New York City culinary training, Matt’s family tradition, and a whole bunch of love, our bagels are the real NYC bagel thing. Thanks for being part of our journey!

Sourdough Preferment
Our sourdough preferment guarantees that our bagels have the bold, sour flavors all true bread lovers look for. It's the beginning of a 3 day process to create our bagel for you.

Hand Rolled
We roll all of our bagels by hand. Sure it takes a little extra time, and the bagels aren't always so pretty, but we think you can taste the difference between a bagel rolled by the warm, loving hands of our baking team versus the cold metal of a machine.

Boiled
Bagels were meant to be boiled. Some "genius" places say steam baking is just as good when in reality this is merely a convenient excuse to cut corners and costs. True bagel connoisseurs will not be fooled.
Our Story
Welcome to our family bagelry, where every bagel is a labor of love and a testament to our shared passion for cooking. Our bagel journey began in 2024, when we—Matt and Katie—decided to follow our hearts and God's plan to create something special for our community.
Katie, our artisan bageler, honed her skills at culinary school in New York City, a place where the art of bagels is held in the highest regard. Matt, our Chief Bagel Officer, brings a rich family tradition to our bakery, as his relatives once ran a beloved bagel shop. Together, we combine Katie’s formal training and Matt’s deep-rooted heritage to bring you the best bagels in Arizona.
After nearly two decades of following conventional paths and doing what the world told us to do, we took a leap of faith. We embraced our calling to hand-roll and boil bagels with dedication and care, infusing each one with the flavors and textures that make them truly exceptional.
